Introducing Uprooted: A Holistic Cooking Series

Uprooted is a recently-launched YouTube series hosted by our very own Zack Woods. While seasonal food and its preparation will be highlighted in the series, the primary goal is to drive deeper conversations about the connecting power of cuisine. This series will bring in guest chefs and a variety of styles of cooking to showcase their talents and share their favorite recipes with YOU!

For our first episode, Zack prepares a beautiful rendition of Mediterranean Stuffed Peppers with both a vegetarian and meat filling. (Trust...both were delicious!)

Recipe and Ingredients:

  • 6 large bell peppers
  • 1 pound lean ground beef
  • 1 ½ teaspoons kosher salt
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon cayenne pepper optional
  • 1 Red Gala Apple
  • 1 (14-ounce) can reduced sodium chickpeas rinsed and drained
  • 1 (14.5-ounce) can fire roasted diced tomatoes in their juices
  • ¾ cup cooked brown rice
  • ¼ cup chopped fresh parsley plus additional for serving
  • 1 cup crumbled feta cheese divided
  • 1/2 cup olives, chopped and divided for topping
