Uprooted’s Latest: Celebrating Heritage & Sacred Connections with Borek & Turkish Coffee

In our most recent episode of Uprooted, we delve into the heart of community and cultural preservation through food, storytelling, and connection. Our guest chef and Bask’s founder, Aylin Ozgener, shares a beautiful slice of her heritage. She led me in the preparation of a traditional Turkish dish called Borek for a vibrant circle of women, all of Turkish descent, who gather at one another’s homes monthly to nourish body, soul, and spirit.

A Ceremony of Service & Heritage

This episode was more than just about making food—it was a celebration of service, aging gracefully, and honoring the bonds that unite us across generations and borders. Esen, Aylin’s mother, a Turkish emigree to the US more than 60 years ago, also joined us in a heartfelt guest appearance. At 90 years young, she graciously guided me in the art of preparing Turkish coffee, a treasured ritual that embodies patience and service.  

The women’s circle shared stories, laughter, and traditions—reminding us that sacred service often walks through the kitchen and the conversation alike. Whether it’s a meal passed down through generations or a simple cup of coffee, these rituals become acts of love that weave community and culture into everyday life.

The Heart of the Dish: Borek

Aylin skillfully rolled and layered thin pastry, filled with a savory mixture of cheeses, herbs, and spices, to create the Borek—a dish that’s beloved across Turkey and the Middle East more broadly. As it baked, the aroma filled the room, elevating the sense of shared tradition and care.

Borek, like many cultural recipes, embodies more than nourishment—it’s a symbol of family, warmth, and resilience. Each bite was a reminder that when we serve others and uphold our cultural stories, we’re not just sharing food—we’re sharing identity, strength, and hope.

A Toast to Legacy & Connection

This episode was a powerful illustration of Uprooted’s core tenant of service—showing that the act of cooking and sharing a meal can be an act of kindness that sustains community. It’s about forging bonds, passing down heritage, and creating sacred spaces where stories and traditions live on.

Borek Recipe: A Taste of Turkish Heritage

Pastry:

1.5 sticks butter

1.25 cups milk

2 eggs

Filling:  

8oz feta cheese

8oz cottage cheese

2 eggs

1 cup chopped parsley

10 cracks fresh black pepper

Instructions:  

  • Preheat your oven to 375°F (190°C).
  • In a saucepan, melt the butter with the milk and whisk in the 2 eggs until well combined.
  • On a large baking sheet, lay out two sheets of phyllo dough. Brush lightly with the melted butter mixture. Repeat until you have a layered stack.
  • Spread half of the cheese mixture evenly over the layered sheets.
  • Place two more sheets of phyllo, brush with butter mixture, and repeat the layering process.
  • Add the remaining cheese mixture and top with the final two sheets of phyllo, brushed generously with butter mixture.
  • Bake for approximately 40 minutes, or until golden brown and crispy.
  • Let cool slightly before cutting and serving.
